Chicken Gnocci soup with tomatoes and grapes. I used whole milk instead of 1/2 and 1/2 to lighten up the soup and balanced the plate with fruit and veggie instead of bread or crackers. This challenge has definately made me realize that its not that difficult to take comfort food and turn it into a health balanced plate with a little help from additonal fruit and veggies.
